Ground Beef Tacos – Greek Yogurt Sauce – Fajita Style Onions and Peppers

This is a quick and easy recipe for Ground beef tacos with a Greek yogurt sauce, and Fajita style onions and peppers

I usually start by cooking the onions and peppers first and setting them aside in tinfoil to stay warm. I then prepare the ground beef and while that is cooking I prepare the yogurt sauce, which is a good alternative for sour cream.

Fajita style Onions and Peppers:

Chop 1 1/2-2 Peppers, whichever colours you prefer( I usually use red, orange, or yellow).

Chop 1/2 of an onion, larger pieces are fine

Chop one clove of garlic

Saute the onions on medium heat until translucent

Add the peppers and cook until soft

Wrap the peppers and onion in tin foil to stay warm, and set aside until the rest of the meal is ready
( I do this in order to use one pan cooking this meal, but this part can be prepared later if preferred)

The Meat:

Saute 1/2 onion and 1 clove of garlic, just like you did for the peppers.

Once translucent, add the beef. When it is cooked halfway through, add 1 1/2 tablespoons of cumin

Cook until brown

Yogurt Sauce:

This is a good, healthier alternative for sour cream.

Ingredients:
one clove of garlic, diced small
5 tablespoons of plain greek yogurt (ratios are flexible)
1 tablespoon chopped fresh cilantro (optional)
juice of 1/2 lemon
1 teaspoon of cumin ( add more to taste, if needed)
a touch of salt and pepper

In a small bowl mix all of the ingredients

Serve with tortillas, grated cheese, guacamole, salsa, hot sauce, and any other taco or fajita toppings that you like!
