Fall is the season for warm, comfort foods that you can eat curled up on the couch with a blanket and a sweater. This is a recipe for an easy and quick tomato soup, that wont make too much of a mess.
Ingredients:
1-2 tablespoons of olive oil
1 onion, chopped
1-2 cloves of garlic, chopped
2 cans of peeled whole tomatoes, squished by hand
1 1/2 cups of chicken broth (can be substituted for water)
salt and pepper
1/2 cup of milk or heavy cream (optional)
Chop the onion and garlic cloves
Empty the two cans of tomatoes into a large bowl and squish them with your hands until mostly broken down
Put 1-2 tablespoons of olive oil in a large pot, on medium heat
Add onion and garlic and cook until transparent, about 3-5 minutes
Add the crushed tomatoes, their juices, and the 1 1/2 cups of chicken broth to the pot
Stir. Bring to a boil and then simmer for about 10 minutes
Put soup in a food processor or blender and blend until liquid
Add 1/2 cup of milk or heavy cream and stir on low heat
Top with parmesan cheese or salt and pepper to taste and serve!
