Carrot & Cauliflower Soup

We weren’t feeling too well in the t.listed house, so I decided to make some hearty soup. I was surprised how well this turned out and how simple it was to make! You can add/subtract any vegetables to this, which allows you to alter it to your preferred tastes!

What you’ll need:

– 3 white potatoes

– 1 head of cauliflower

– 1 package of baby carrots

– 1 large white onion

– 3-4 tbsp bouillon powder

– 3 garlic cloves (minced)

– 1 package goat cheese

First, chop all of your vegetables. It doesn’t matter how you cut them because everything is going to be blended! Place all of your vegetables in a large pot on high heat.

Once all of your vegetables are in the bowl, add water so all of the vegetables are covered. Next, add your bouillon powder and mix thoroughly.

Boil for about 15 minutes (or until all vegetables are cooked) and pour into your blender. Add your garlic, then mix!

Once blended, pour into your bowls and add goat cheese for garnish! You can also add cheddar cheese to the vegetables before they’re blended to make the soup a little bit more creamy.

  1. Nice cheese garnish.

    I love how versatile soups can be. Some vegetables which are only average can be stunning in soups. Celery is one ingredient that I love in soups but not so fond of when cooked by other methods.
